Granola muffins (vegan)

It’s been a while since lil’ bun and I had the pleasure in enjoying a couple of muffins for breakfast so we decided to make some today. Normally our go to muffins are oatmeal raisin but we were out of oatmeal ): So, in place of our usual oatmeal, we decided to use granola instead since granola is really just made up of a bunch of oatmeal afterall. We also decided to sprinkle a bit on top because we adore the look of a golden crusted muffin top.

Ingredients (12 muffins):

2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons oil
1/3 cup sugar
1 1/4 cup almond milk
1 teaspoon vanilla extract
1/2 cup raisins
1 cup granola
2 teaspoons cinnamon

Instructions

1. In a large bowl, sift together whole wheat flour, baking powder, salt, and sugar.
2. Stir the oil, milk, and vanilla into the dry ingredients until just combined, make sure you don’t overmix! Fold in the raisins and 3/4 cup granola.

3. Fill the muffin tins 2/3 with batter and top with a few sprinkles of cinnamon and the remaining granola.

4. Bake at 350F for 18 – 25 minutes until golden brown. (Pardon the dreaded lighting in the photo, we were baking the muffins at night to have the next morning and the natural lighting faded)
